  • 110 grams starter — 100% bread flour, fed overnight
  • 55 grams rye flour — 10%
  • 137.5 grams whole wheat flour — 25%
  • 357.5 grams white flour — 65%
  • 400 grams water
  • 12 grams salt

Tasted very wheaty. Uneven and more dense crumb than normal
