Ingredients

  • 60 grams starter
  • 160 grams bread flour
  • 130 grams all purpose flour
  • 185 grams water
  • 6 grams salt
  • 5 grams olive oil

  • 4:36 PM Stretch and fold
  • 5:21 PM Coil fold
  • 6:41 PM Coil fold, put in fridge
  • 10:00 PM Out of fridge
  • 11:31 PM In fridge
  • 10:00 AM Out of fridge
  • 12:00 PM Separate and shape
  • 4:08 PM Bake

Notes

Made a pizza bianca (italian sandwich type thing) and a few pitas from the leftover dough. It would have been better if softer, I think I baked it for too long so became crispy. Pizza oven would be ideal
