  • 75 grams starter
  • 175 grams water
  • 0.5 teaspoons g vanilla extract
  • 4.5 grams salt
  • 25 grams brown sugar
  • 250 grams bread flour
  • 25 grams cocoa powder

Schedule

  • 3:00 PM Mix
  • 3:30 PM Stretch and fold
  • 4:00 PM Stretch and fold
  • 4:30 PM Stretch and fold
  • 5:00 PM Fold — The dough tore :/ i’m going too fast because i have to leave
  • 7:56 PM Coil fold
  • 11:00 PM Shape
  • 1:30 PM Bake

Notes

Turned out well! I thought this recipe yielded a bigger loaf. Could almost double it for a full sized chocolate boule next time.
